Pumpkin Scones

My mother and I have always loved Starbucks pumpkin scones but they’re quite expensive and you can’t get them year round. Since we are both avid bakers, we also knew that we could make a better scone; one that tasted more homemade. We received this recipe from a friend of my mother’s and I’ve been making them since 2010. I’ve barely bought another Starbucks scone since!

  • 2 cups flour
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1 tbsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup cold butter
  • 1/3 cup buttermilk
  • 1/2 cup pumpkin
  • 1 tsp vanilla

Mix together all dry ingredients and then cut cold butter in until mixed to a coarse crumb.

In a separate bowl mix the pumpkin, buttermilk and vanilla.

Make a well in the dry, add liquid ingredients and mix util just incorporated. Do not over mix.

Transfer to a floured surface and pat into a rounded mound that is your desired thickness and cut into 8 pieces.

Separate pieces and put onto a parchment lined baking tray. Bake at 350 F for 20 mins or until a toothpick comes out clean.

Let cool. Cover with an optional cream cheese icing and enjoy with friends and family!
