This is my favourite banana muffin recipe. I find that sometimes banana bread can be a little dry, but the coffee in these muffins keeps them moist and tasty. I found this recipe on

Let’s get started!

Step 1

Preheat the oven to 350F.

Step 2

Start by peeling 3 ripe bananas and mash them in a large bowl.


Step 3

Add to the mashed bananas:

  • softened half cup of margarine
  • ¾ cup of sugar
  • dissolved one tablespoon of instant coffee with one tablespoon of water
  • 1 teaspoon of vanilla extract
  • one egg

Mix these together.

Step 4

Then add to the mix:

  • 2 ¼ cups of all purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup of milk chocolate chips

Mix only until the dry ingredients are moistened. Overmixing will cause tunnels in your muffins and make them tough.

Step 5

Line muffin tins with liners and scoop muffins. The mix should make 15-18 muffins.


Step 6

Bake at 350F for 20-25 minutes.
