These muffins are very tasty and are super versatile, allowing you to make many different combinations of nuts and dried fruit. You can also substitute apple for zucchini if you don’t have any or do a combination of both. I did combination in mine because I did not have enough zucchini.

Let’s begin!

Step 1

Start by preheating your oven to 350F.

Step 2

Grate your zucchini. You will need 2 cups.

Step 3

Add the following to a mixing bowl:

  • 1 cup of sugar
  • 2 eggs
  • 3/4 cup of vegetable or canola oil
  • 1 tablespoon of vanilla
  • 1/2 cup of milk

Then blend them together.

Step 4

Then add to the bowl:

  • 3 cups of all purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking power
  • 1 teaspoon of cinnamon

Then I also added:

  • 1 cup of chocolate chips
  • 1/2 cup of sliced almonds
  • 1 cup of coconut

You can add really any almost any dried fruit or nuts to these muffins. Another one of my favorite combinations is:

  • 1 cup raisins
  • 1/4 teaspoon of allspice
  • 1/2 cup of apple sauce

Once you have decided on the fruit and nuts, mix the batter until the flour is no longer dry. Do not over-mix. Fill lined muffin tins about 3/4 the way full and bake 15-20 minutes. They should be light golden brown. Once they come out, let cool and then enjoy.

This recipe was taken from the cook book “Among Friends” by Rotary International District 536. I did modify it to what I like in the muffin, by taking out some oil and sugar and adding milk.
